I made this recipe for Sea Scallops in Bourbon Jalapeño Cream Sauce as our 2nd course for Valentines Day dinner in.  I will never claim to be a chef and I am not good at making things up as I go.  But I am great at googling new recipes and if I follow them, then I usually don’t mess it up.  

I do not eat scallops but I have made them for Ralph a few times and every time he says I make them perfectly.  I know it is one of his favorite.  So as a special treat I made these for him and he said it was better than if he had gotten at a restaurant.

Ingredients

Bourbon Jalapeño Cream Sauce
Servings: 3 scallops each
Instructions
Bourbon Jalapeño Cream Sauce
  1. I made this first because the scallops cook fairly quickly. Heat olive oil in sauce pan over medium high heat and add the garlic and jalapeños. Saute until golden ( approximately 2 minutes)
  2. Add bourbon and cook for about 1 minute stirring constantly.
  3. Add heavy whipping cream and bring to a simmer over medium heat. Stir in the butter, salt and pepper and simmer until cream sauce is slightly thickened.
Scallops
  1. Sprinkle salt and pepper over both sides of the scallops.
  2. Head olive oil in saucepan over medium high heat. One the oil is hot, place the scallops in the pan and add the butter and lemon juice. Cook for about 2 1/2 minutes on each side.
  3. Place cooked scallops on a dish and drizzle the cream sauce over the scallops.
  4. Sprinkle with fresh chopped cilantro. Enjoy!
