When Ralph went to Cuba he emailed me a recipe that I must make for him!  He had a co-worker that made him some and he said they were delicious.  I am not much of a muffin fan but I am always willing to please my man! I finally got around to making him a batch of the baked oatmeal cups for him this morning to take to work.

Ingredients
Servings: Oatmeal Cups
Instructions
  1. Preheat oven to 350F
  2. Spray the muffin cups with cooking spray. I just used the paper muffin cups
  3. Mix eggs, vanilla extract, bananas and honey in a bowl.
  4. Mix oats, cinnamon, and baking powder in a bowl
  5. Combine oat mixture to the egg mixture
  6. Stir in almond milk
  7. Scoop oat mixture into the muffin cups
  8. Top with blueberries. ( I also used dark chocolate chips)
  9. Bake 26 mins or until golden brown. ENJOY!
